Smoked Beef Bacon
Just like traditional pork bacon, our smoked beef bacon is made from the belly of the animal. This kosher bacon has less fat than the pork version, but just as much savory bacon flavor. We have it gently cured and smoked at our preferred artisanal smokehouse on the Mendocino coast of California, so you can substitute it for regular bacon in almost any recipe. Florencia’s favorite way to cook it is in the oven, so the fat renders slowly without making the meat brittle. Don’t forget to save the drippings — grass-fed beef fat makes the best fried potatoes you’ve ever had.
