Hangar Steak

When a cut is also called butcher’s steak because it’s prized by the person who can choose from the whole cow, you know it’s a steak to look forward to. Hanger steaks are known for theirflavor — doubly so for those from our Wagyu herd! Positioned below the diaphragm of the animal, these V-shaped muscles are protected by the rib cage, making them a more tender cut than flank steak. Hanger steak is often grilled, but can be used in recipes calling for flank steak. Like a flank steak, hanger steaks enjoy a marinade, but can also do with simple seasoning. Look for it at Argentine asados and French bistros (served with pomme frites.)
